I’ve heard about the show, but never seen it. I cut all TV out of my life years ago. I don’t need this sorta s~~~ in my life.
No, its not. Some of the stuff they show are very cool. Some people are fascinated by pieces of history; the show may be staged (and there was never a need to prove that it is) but the history behind the stuff isn’t.
None of which means its target audience isn’t women.
It’s basically a reworked clone of Antiques Roadshow, and who watches Antiques Roadshow? Women.
Don’t believe me? Look at who the advertisements played during the show are aimed at.

Different countries, different ads. Your country has a majority of female population, that’s why the ads are targeted towards women.
I’m not saying the target audience isn’t women. Its gender-neutral. You can’t say “Oh, the show only attracts women viewers” or “History is for women”. <- This is what I understood from your statement. Sorry if it was otherwise.
I didn’t really find anything ‘gynocentric’ in the show (not the ads) apart from what the OP has said. Its a show for enthusiasts. They include both men and women, not women alone.

Women always want men to sell their resources and buy them things.

They are the demographic the shows advertisers want to appeal to. As such the show is designed to appeal to women. It may also get male viewers such as yourself, but the producers see your segment of the audience as incidental.
It’s like Dr. Who. For decades the show mainly appealed to a male audience and was not funded by advertising. But just note how much effort has gone into casting recent Doctors in the reboot who appeal to the female audience. And why? Because advertisers like to advertise to the women in the audience. Because women are easier to convince to part with money. Because by and large they weren’t the ones who earned it.
So that is why so many of the men in Pawn Stars are pussy begging simps selling their things at the command of a woman. Because women like to see that sort of thing. And women are the audience the advertisers want the most.

In any case, I never expected women would be attracted to the everyday squabbling of an all-male family. That is just absurd, but that might just be me. Thanks for the clearance.

Are you kidding? They eat that s~~~ up. It appeals to their smug sense of false superiority. “Oh look at those squabbling men left to their own devices without any sensible women there to guide them. What they need is a woman’s touch to civilize them.” And of course they each see themselves in that ‘civilizing’ role.
As if the world really worked that way. In reality all that drama is fake bulls~~~ scripted specifically to appeal to the female audience in exactly that way. Because women f~~~ing love pointless strife and drama. Compare that to specifically male shows like the old Car Talk on the radio. Sure Car Talk had a lot of joking around and ribbing and self deprecating humor, but it had zero f~~~ing strife or drama. None. Just guys and cars and how to fix them.
Seriously, wouldn’t you prefer it if Pawn Stars was just about the cool s~~~ people bring in without all the bulls~~~ drama and f~~~ing around?

The drama cracks me up sometimes but, of course, I’d still love the show without it.

Actually I think it’s funny, especially the grumpy old man. He maybe grumpy, and judgmental of today’s youth, but he knows how to make it funny and true at the same time.
