The Bubblegum Crisis OVAs (not TV series) each had very good opening and ending theme songs. Also, the AD Police opening theme song is good.

Ghost in the Shell: Stand Alone Complex/2gig, Outlaw Star and Gundam Wing have good kick ass intro songs.

Ranma 1/2, InuYasha, Bleach, Naruto have some good open and ending songs, depending on the season. It is a mixed back with those four series.

90% of the soundtracks to Cowboy Bebop and Black Lagoon are wonderful for listening too.
